Wheat Quality, does it Really Matter?

Have you ever wondered where Oklahoma Wheat goes after harvest, and if quality really does matter when it is taken to the local elevators? Join us for a luncheon seminar focusing on the sometimes bumpy, winding path that Oklahoma wheat travels from the farm to the bakery.

Topics being discussed will be global wheat demand, the differences in classes and what they offer, and new work that is being done to capture market share with new product development lines at OSU.

We will also be sampling different varieties and showing how they perform in a bakery setting, while also discussing a more direct market approach with flavor profiles. Participants will also sample tasting of popular wheat varieties grown in Oklahoma that have been baked in loaves of bread.

Other items to discuss will be the growing demand for quality testing, what farmers can do to improve wheat quality, and emerging trends and issues for the 2018 marketing year.

The Canadian County OSU Cooperative Extension Service will be hosting the Wheat Quality Seminar. The workshop will be presented by Mike Schulte, Executive Director of the Oklahoma Wheat Commission.
