Short Rib Exports Pushing US Carcass Values Higher

Wholesale beef and pork cutout values have made healthy gains recently, thanks in part to strong performance from items typically targeted for export. U.S. Meat Export Federation Economist Erin Daley offers her analysis on this Beef Buzz.

In particular, she tells us about the strong surge in the value of short ribs that has come from South Korean demand, as well as sales that have this product going into other Pacific Rim countries.
