Marbling Development Dependent on Age and Breeding

In part two of our conversation with Brad Johnson of Texas Tech University, he talks about the impact the diet and age of the animal can have on the amount marbling in the animal. Johnson says they have discovered that the age of the animal does make a difference. The older the animal, the less receptors are available in the back fat, which should allow marbling to come a little easier with age, says Johnson.
Johnson also says the breed and the genetics also play a big role in the marbling process. Many Asian and Japanese breeds have a high ability to deposit marbling, however Johnson says, they have a lower amount of muscle. There is definitely a genetic connection between different breeds and marbling development says Johnson.
Johnson also discusses the way management practices in the U.S. and in feedlots can have an affect on the marbling process, which he says many times has a negative effect on the enhancement of marbling.
