Flavors of Oklahoma for your Barbecue

Local businesses in Oklahoma produce many of the great flavors needed for the perfect barbecue this Memorial Day. May is also National Barbecue Month. Made in Oklahoma Coalition is the organization helping local food producers thrive in our state. They want to know, what's in your picnic basket?
All great barbecue begins with the right meat. Vice President Paul Schatte, of award winning Head Country Barbecue Sauce in Ponca City, Okla., offers his take on great barbecue. Schatte believes that all meat is not created equal, and he has a preference for aged beef.
"The finished product is only as good as what you start with," Schatte said. "Ask your local butcher about buying aged beef. Get to know your butcher and seek his knowledge."
Adding sauces to the meat can expand the flavor dimensions of a dish. Head Country produces many sauces to compliment any dish. The three staples are Original, Smokey and Hot. Another Oklahoma made sauce to check out is Daddy Hinkle's Instant Meat Marinade.
There are many meat producers in Oklahoma too. Bar-S, a well-known producer of hot dogs, sausage, bacon, lunchmeat and ham is packaged near Clinton, OK. If steak is what you crave, Chef's Requested is another Oklahoma company supplying bacon wrapped filet mignon and other meats to Wal-Mart. Schwab Meats, Mountain View Meat Company, Lopez Foods and JC Potter continue to round off our list of Oklahoma meat producers.
After everyone has had their fill of barbecue, life just gets sweeter with a big slice of pie. Oklahoma is packed with desert makers like Fields Pies and My Big Mama's Kitchen Pies.
Made in Oklahoma Coalition Coordinator Kerry Barrick is excited about the diverse group of local manufactures that her organization promotes.
"We are proud of our coalition members," Barrick said. "They produce great food here in Oklahoma and have a positive impact on our local economies."
From meats and condiments to deserts and drinks, you can find a local producer representing many tastes in Oklahoma.
"These companies are important to our state, as they help provide thousands of jobs to Oklahomans," Barrick said.
