2021 Marks the 30th Year the OCA Beef Tent has Served Guests at the Tulsa State Fair

Since 1991 the Beef Tent, run by Oklahoma Cattlemen's Association members, has been a sought-after fair food unique to the Tulsa State Fair. The tent offers consumers a hard-to-find, healthy meal while giving them an opportunity to meet some of the ranchers who produce the beef they buy in the supermarket.
Radio Oklahoma's own KC Sheperd stopped by the OCA Beef Tent to grab a bite and speak with Tiffany Pruitt, director of operations for the Oklahoma Cattlemen's Association and coordinator for the Oklahoma Junior Cattlemen's Association.
"This is our 30th year here," Pruitt said. "This is the one time of year that we set up as a food-service vendor."
The tent serves famous ribeye-steak sandwiches, that folks from across the state look forward to every year, Pruitt said.
"For several years, we have been chosen as Oklahoma's favorite fair food," Pruitt said. "It is unique compared to a lot of the other fair food - we do not offer a fried product - it is a freshly grilled product."
She said OCA members pride themselves in offering folks a healthy, safe option at an affordable price.
"I have worked the window several times," Pruitt said. "It is heartwarming to hear the consumers come up and say how much they look forward to this event and that they hope we are here because this is their favorite steak."
For Pruitt, attending the Tulsa State Fair is a family tradition. She followed in her mother's footsteps, showing animals competitively as a child.
"To grow up in this barn - I was very successful showing in this barn," Pruitt said. "My family has been able to be successful, so it is just really neat that I have been able to graduate from this barn, have a career in the beef industry and move into serving and still being involved."
She said as an adult, she gets to see much more of the fair than she ever did showing cattle as a kid.
