Segments of Beef Industry Must Cooperate to Increase Demand

Cooperation between different segments of the meat industry has lead to an improvement in beef production. According to Glen Dolezal with Cargill Meat Solution, for this to continue and for the industry to be profitable, everyone needs to be on the same page to promote beef in every sector.
Beef quality has been up the past three years and Dolezal says Cargill thinks a lot of that is related to changes in the genetics of cattle. Dolezal says Cargill is beginning to see more and more black-hided cattle entering their facilities and more abundant alternatives in feed stuffs, mainly ethanol co-products.
Cargill is also working to deliver more uniformity to their customers and technology like photo assisted grading, which has been helpful. Dolezal says the cameras have been a big success story because their customer sare very pleased and like to look at the consistency that they are getting box to box based on marbling levels and other carcass traits.
